If there’s extra brandy, it’s a good idea to have a snifter or two. Can’t hurt and boy, does it make time fly while you’re waiting for those breasts to brown.
So, grab a snifter and get cookin’!
Granny’s Brandied Turkey Breast
4 uncooked turkey breast slices, about 1/4 inch thick (from 1 1/4 pound breast)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup all purpose flour
1/4 cup butter
1/4 cup brandy
1/4 thin slices (1 ounce each) provolone cheese
Step One: Sprinkle turkey with salt and pepper.
Step Two: Coat turkey with flour.
Step Three: Melt butter in 12 inch skillet over medium heat. Cook turkey in butter about 2 minutes each side or until brown.
Step Four: Add brandy. Cook uncovered until liquid has evaporated and turkey is no longer pink in center.
Step Five: Top turkey slices with cheese; remove from heat. Cover and let stand about 2 minutes or until cheese is melted.
Step Six: Serve!
