GLAZE INGREDIENTS:

shallot

maple syrup

balsamic vinegar

chicken or veal broth

unsalted butter

at room temperature

 

Method – Brine

  1. Place all the brine ingredients in a bowl and let cool.

  2. Add the turkey chops, cover and refrigerate for 24-36 hours.

Method – Compote

  1. Place a large skillet over medium heat.

  2. Add the oil and when it is hot.

  3. Add the onion and ginger and cook for 1 minute.

  4. Add the cranberries, raisins, brown sugar, maple syrup, brandy, balsamic vinegar and orange juice.

  5. Cook until syrupy and reduced by half, about 10 minutes.

  6. Add the cayenne, cinnamon, nutmeg, and cranberry juice and simmer until thickened, about 12-15 minutes.

  7. Remove the cinnamon stick and set aside to cool.

Method – Glaze

  1. Place the shallot, maple syrup, balsamic vinegar and chicken broth in a small sauce pan and bring to a boil over medium-high heat.

  2. Lower the heat to medium and cook until reduced by half, about 12 minutes.

  3. Add the butter. Set aside.

  4. Prepare the grill.

Method – Grilled Turkey Chop Directions

  1. Remove the chops and dry them with a paper towel.

  2. Sprinkle both sides with the salt and pepper and place on the prepared grill.

  3. Cook for about 5 minutes on each side.

  4. Pour the glaze over the turkey chops and serve immediately, accompanied by the cranberry compote.
