Barbecue Sauce for Steak

T-Bone Steak with 6666 Soppin’ Sauce

(Recipe adapted from Pitchfork Ranch, Guthrie, Texas; originally found by us in a Sunday N.Y. Times Magazine, 1990)

 

The sauce:

1  cup water
1 16-ounce can tomato paste
5 teaspoons chili powder
1 1/2  teaspoons black pepper
1/2 cup ketchup
1/2 teaspoon garlic salt
3 tablespoons Worcestershire sauce
1/3 cup white vinegar
1/3 cup fresh lemon juice
1/3 cup butter or margarine
1/4 teaspoon cayenne pepper
1/3 cup honey
1/3 cup brown sugar
1/2 teaspoon salt

The steaks:

 

4 T-bone steaks, 1-inch thick

1/2 teaspoon garlic salt

1/2 teaspoon black pepper

 

·         Place the ingredients for the sauce in a saucepan and stir until blended.  Bring the mixture to a boil, reduce the heat to medium-low and simmer for one hour.

·         Season the steaks with the garlic salt and pepper.  Place them on a grill or in a broiler.  For medium-rare, cook the steaks for 10 minutes, brushing them occasionally with the barbecue sauce.  Turn the steaks and cook for another six to seven minutes.  Brush again with the sauce and serve hot.

 

Yield:  Four servings.
