If you are lucky, you will have your own fresh rosemary to enhance this dish.

Oven Roasted Potatoes


3 pounds (about 15 small) red new potatoes, quartered

3 tablespoons olive oil

2 cloves garlic, finely chopped

2 teaspoons fresh rosemary, finely chopped

1/2 teaspoon salt

1/2 teaspoon ground black pepper


Preheat oven to 400° F.

Combine potatoes, oil, garlic, rosemary, salt and pepper in large bowl; toss to coat well.

Place potatoes around meat if you are cooking them with a rack of lamb or any roast beast. . Bake in preheated oven for 70 to 75 minutes.
