Egg Nog Muffins
4 cups flour
2 tbsp. baking powder
1 tsp. salt
1 1/3 cups sugar
2 eggs
2/3 cup canola oil
1 1/2 cups eggnog
1/2 cup rum
1 tsp. nutmeg
Preheat oven to 350° F.
Sift together the dry ingredients. Stir in egg, oil, eggnog and rum. Fill muffin pans. Sprinkle tops with nutmeg.
Bake 20 minutes at 350° F. degrees.
Yield: 2 dozen muffins.
