a simple, quick bread — good for brunch or a late afternoon snack
Cinnamon Bread
2 cups flour
1 cup sugar
2 teaspoons baking powder
½ teaspoon baking soda
1-½ teaspoons ground cinnamon
1 teaspoon salt
1 cup buttermilk
¼ cup vegetable oil
2 eggs
2 teaspoons vanilla extract
2 tablespoon sugar
1 teaspoon ground cinnamon
2 teaspoons butter
Preheat oven to 350° F. Grease 9- by 5-inch loaf pan.
Measure first 10 ingredients into a large bowl. Mix well. Pour into pan. Smooth top.
Combine 2 tablespoons sugar, 1 teaspoon cinnamon and butter. Mix until crumbly. Sprinkle topping over smooth batter. Using knife, cut in batter with swirling motion to give marble effect.
Note: If you don’t have buttermilk, substitute milk with 1 tablespoon vinegar to measure one cup.
Bake for 50 minutes; test with toothpick.
