CHINESE CENTURY SALAD

 

 18-ounces  bean sprouts, prepared* and chilled

3 carrots, cut into thin strips or grated

2 green peppers, shredded

½ cup fresh mushrooms, sliced thinly

 

To prepare bean sprouts to use in cold salads:  In a large sauce pan, over high heat bring ten cups or more water to a rolling boil.  Add the bean sprouts to the boiling water.  Before the water boils again, remove pan from heat and immediately drain the bean sprouts in a colander.  Then soak (or rinse evenly) the bean sprouts in cold water until thoroughly cold.  Drain very well.  Chill in refrigerator until ready to use.

 

Place prepared bean sprouts and rest of the above ingredients in large salad bowl.

Add:

 

1 red pimento, in thin strips

1 cup shrimp (optional)

 

Pour garlic dressing, see recipe below, over salad and mix until well-coated.

 

 

Garlic dressing for Chinese Century Salad:

 

Combine in a glass jar and shake until well blended–

 

4 tablespoons salad oil

2 tablespoons apple cider

½  teaspoon white pepper

½  teaspoon dry mustard

1 clove garlic, crushed

 

After combining the above 5 ingredients, add to the mix

 

2 teaspoons soy sauce

1-inch piece fresh ginger, grated

 

Serves 4.
