Crust: Nabisco Zwieback, finely rolled —– 6-oz. pkg.

           Sugar ——————————- 2 Tb.

           Softened butter ——————— 1/2 cup


     Thoroughly blend ingredients together.

     Press mixture firmly in even layer on bottom and

     sides of a 9-inch spring-form pan.


Filling:  Cream cheese ——————— 1 lb.

              Sugar —————————- 1/2 cup

              Salt —————————– 1/4 tsp.

              Flour —————————-   2 Tb.

              Vanilla ————————–   1 tsp.

              Eggs, separated ——————   4

              Light cream ———————-   1 cup


Let cheese soften at room temperature.

Combine sugar, salt, flour.

Add to cheese and mix well.  Add vanilla.

Stir in 4 eggs, one at a time, mixing in completely.

Add light cream, blending thoroughly.

Beat egg whites stiff but not dry and carefully

fold into mixture.

Carefully pour into crust.

Bake in slow oven (325° F.) about 1 hour 20 minutes.

Cool thoroughly before removing from pan.
