Terri B’sBusy-day Sausage Appetizer

We have marked this recipe with our fairy-stamp of approval — who cannot usea little magic in the kitchen?
Busy-day sausage appetizer is a favorite of Terri Boucher, a “fellow” EastHartford Rotarian:  It will seem magical — quick, easy and a real tastetreat.  Definitely something to whet your guests’ appetites.

1 pound cheddar cheese, shredded
1 pound loose, hot or mild Italian sausage,* not in casing, crumbled
2 cups Bisquick

Preheatoven to 350° F

Mix the above three ingredients; some light, plastic gloves will facilitate athorough mixing.  Shape into small balls.  Terri recommends using acookie “shaper” or tool for forming small meatballs to speed up thisprocess.

Bake at 350°F  for twenty minutes. Voila!  Off to your neighborhood, potluck appetizer party!

Make ahead note:  You can form these balls ahead of time, refrigerate, then bake at the last minute, just add a few minutes if you have not had achance to bring them back to room temperature prior to baking.

*Terri points out that breakfast sausage is not the best for thisrecipe.  Look for mild Italian sausage, preferably not in casing, thoughone can remove the meat from the casing if necessary.  Of course, if you andall your guests like a bit of heat, you can use a hotItalian sausage.
