Rosemary Lemon Chicken
4 chicken breasts
½ cup lemon juice
1 teaspoon finely grated lemon peel
2 tablespoons honey
2 tablespoons vegetable oil
2 tablespoons fresh rosemary
Mix together lemon juice, grated lemon peel, honey, vegetable oil, and fresh rosemary. Marinate chicken in lemon juice mixture for 30 minutes to several hours.
Cover and bake at 375° F. for 30 minutes.
Remove cover and bake for another 20 minutes.
Fresh rosemary is especially good with lamb and poultry.
If you have recipes specifying dried rosemary, convert from dry to fresh, use three times as much fresh as dry. Fresh herbs added at the last minutes are much more flavor-enhancing.
